Ingredients

  • 8 oz cauliflower
  • 8 oz yellow/gold potato
  • ½ onion
  • 2 garlic
  • ½" ginger
  • ½ t turmeric
  • ½ t cumin
  • ½ t coriander
  • ½ t salt

Instructions

  1. Step 1

    Chop cauliflower into bite-size florets. Peel and cube potato into bite-size. Peel (if desired) and chop ginger.

  2. Step 2

    Cook the onion, garlic, and ginger in 2T of olive oil in pot over medium heat until onion cooked through.

  3. Step 3

    Add potato, stir, cook 2-3 minutes. Add cauliflower, stir, cook 3-4 minutes.

  4. Step 4

    Add spices, stir, cover, and cook on medium heat for ~15 minutes until tender.
