Ingredients

Cookie crust

  • 2¼ c crushed Oreo chocolate cookies (1 normal sized package)
  • 2 T white granulated sugar
  • 1 T light brown sugar
  • ½ c butter (1 stick)

Cheesecake

  • 32oz cream cheese (4 packages), softened, room temp
  • 1 c white granulated sugar
  • 4 large eggs
  • ½ c Baileys
  • ½ c semi-sweet chocolate chips
  • ⅓ c heavy whipping cream

Coffee whipped cream

Tools/equipment needed

Springform pan (prefer 9"). Piping bag.

Instructions

  1. Step 1

    Set out cream cheese to soften.

  2. Step 2

    Crush Oreo cookies. Melt butter. Combine cookie crumbs with sugars and butter. Pour into springform pan, covering bottom and climbing up sides if possible.

  3. Step 3

    Preheat oven to 325F.

  4. Step 4

    In a large bowl, beat together soft cream cheese with white sugar until just combined.

  5. Step 5

    Add eggs one at a time until smooth. Add Baileys until smooth and creamy.

  6. Step 6

    Pour cheesecake mix into pan. Place the pan on a baking sheet to collect any leaks.

  7. Step 7

    Bake 55-60 min or until set on the sides and only slightly jibbly in the center. Turn off oven and let cool in oven (propping open door). Once cooled to room temp, place in refrigerator overnight.

  8. Step 8

    In a small saucepan, heat ⅓c of heavy cream. Once hot, turn off heat and add chocolate and stir. Let the chocolate cool slightly, then pour over the top of the cake. Let set at room temp ~15 minutes, then put back in the fridge for at least an hour.

  9. Step 9

    Make the coffee whipped cream by whipping together the rest of the heavy cream, brown sugar, espresso powder, and vanilla extract.
