Baked Chicken Meatballs

Ingredients

Meatballs

  • 1 lb ground chicken (or turkey)
  • 1 egg
  • ½ c panko breadcrumbs
  • ½ c grated parmesan
  • 2 T olive oil
  • ½ t garlic powder
  • ½ t onion powder
  • ½ t salt
  • ½ t black pepper

To serve

Serve with almost anything. On pasta (with red, white, or pesto sauce), with sweet potatoes and green beans, with a dipping sauce, etc.

Instructions

  1. Step 1

    Line 1 or 2 baking sheets with foil. If cooking straight away, spray a little bit of baking oil on sheets and preheat oven to 400F.

  2. Step 2

    Mix all ingredients together in bowl. Roll mix into ~30 small balls.

  3. Step 3

    If freezing, place sheets full of meatballs into freezer for ~1hr before taking out and placing in freezer bag. Bake 20 min, or 30 minutes if from frozen.
