Breakfast Egg And Sausage Quesadillas
Ingredients
- 16oz country sausage
- 12 eggs
- ½ t salt
- ½ t pepper
- 12 oz shredded cheddar
- ~10 medium (soft taco) flour tortillas
Instructions

Step 1
Add sausage to cast iron skillet and cook over medium heat. Remove, leaving grease.

Prewhisk eggs, season with salt and pepper. Cook in sausage-greased skillet. Cook until eggs are set, slightly moist. Turn heat off, remove from hot burner.

Add sausage back to skillet, along with cheese. Stir until evenly mixed.

Place ½ c mix into half of each tortilla. Fold tortilla closed.

To freeze them all, place on plate or baking sheet with parchment between each one. Freeze at least an hour until solid. Transfer to air-tight bag for up to 3 months.

Step 6
To heat from frozen, place in cast-iron skillet over low heat (~2) for 15 min, covered. Flip, cover again, cook ~8 min. Uncover, turn heat up to med-low (~4-5) and cook until browned, ~3 min per side.
