Ingredients

Meatballs

  • 1 russet potato
  • 1 T butter
  • 1 T olive oil
  • pinch of cayenne
  • ⅓ t garlic powder
  • ⅓ t onion powder
  • ¼ t paprika
  • optional: rosemary, garlic, thyme

Instructions

  1. Step 1

    FINELY dice potatoes. Microwave 3.5-4 mins, covered with paper towels. Let potatoes cool to room temperature (can refridgerate and use next day).

  2. Step 2

    In large cast iron skillet, melt butter and olive oil. If using rosemary, garlic, add now. When they start to pop and sizzle, remove them and discard.

  3. Step 3

    Add potatoes. Season generously with salt, pepper, and seasonings. Cook ~8-10 minutes, flipping and tossing.
