Cajun Foil Packet
Ingredients
- 13oz package of Andouille sausage
- 1 lb baby red potatoes
- 1 lb green beans
- 8 oz cremini mushrooms
- 1 yellow onion
- 4 T butter
- 4 t cajun seasoning
To serve
Makes 4 servings total, best to split making them in half. 2 pouches, then another day make 2 pouches. Use half ingredients, better fresh.

Step 1
Preheat oven 425F.

Step 2
Thinly slice sausage. Dice potatoes very small. Trim green beans. Clean and halve or quarter mushrooms.

Divide ingredients among foil packets (2 for half servings, 4 for full). Add butter, seasoning, salt and pepper, and toss in the packet gently. Seal tight. Can wrap 2x in foil if necessary.

Bake for 30-40 minutes.
