Cauliflower Tikka Wraps

Ingredients

Cauliflower marinade

  • 1 large cauliflower head
  • 10.5oz plain greek yogurt, divided
  • 2 garlic cloves, grated or finely minced
  • knob of ginger, peeled and grated
  • juice of ½ lemon
  • 1 t cumin
  • ½ t ground coriander
  • ½ t turmeric
  • ½ t chili powder
  • 1 t maple syrup
  • salt

Wrap

  • pickled red onions
  • fresh mint
  • ⅓ of a cucumber
  • 4 small naan

To serve

Makes enough for 4 wraps, 2 per serving. 1 night's worth of meal.

Instructions

  1. Step 1

    Cut cauliflower into florets. Bring a pot of water to a boil, and also create an ice water bath. Add to boiling water for 3 minutes, then blanch in cold. Drain and let cool.

  2. Step 2

    Create marinade. Combine ⅔ of the yogurt with the garlic, ginger, lemon juice, spices, syrup, and salt. Marinate cauliflower 30m-2hr.

  3. Step 3

    When ready to cook, skewer the cauliflower and cook on grill, turning, until charred on edges and tender in the middle.

  4. Step 4

    To create raita, chop mint and add to remaining yogurt with grated cucumber. To serve, warm the flatbread, spread the raita on top with pickled red onion and extra mint and the cauliflower.
