Ingredients

  • 1 small onion
  • 1 garlic clove
  • 1/2" knob of ginger
  • 5 T sunflower oil
  • 5 t coriander
  • 5 t cumin
  • ½ t chili powder
  • ½ t garam masala
  • 1 tomato
  • 1 15oz can chickpeas
  • 1 c water

Instructions

  1. Step 1

    Roughly chop onion and tomato, finely mince ginger and garlic. Rinse chickpeas.

  2. Step 2

    Bring the oil to heat on high in medium saucepan. Saute the onions. Then add ginger and garlic for ~1 min.

  3. Step 3

    Add in coriander and cumin, cooking for ~2 min. Add a splash of water if it starts to get stuck at bottom of pan.

  4. Step 4

    Add the chopped tomato, fry for 5 minutes until tomatoes disintegrate. Lower heat, simmer for 5 minutes until you start to see oil around the sides of the pot.

  5. Step 5

    Add chickpeas, stir, add water, garam masala. Simmer 10 minutes until thickened. Salt to taste.
