Chicken Adobo
Ingredients
- ~16 drumsticks
- 4 bay leaves
- 1 head of garlic, cloves peeled and smashed
- 2 t whole black peppercorns
- ¾ c coconut, white, or rice wine vinegar
- ½ c soy sauce
- 1 T coconut sugar
Instructions

Step 1
Add all ingredients together and marinate overnight.

Preheat oven to 280F.

Pour all contents into dutch oven. Close lid, place oven for 45 minutes. When done, remove from oven. Raise oven temp to 450F.

Remove drumsticks from pot, arranging on oiled baking sheet. Return to 450F oven for 5 minutes until browned.

While oven is coming up to the higher temp and chicken is browning further, place the dutch oven on a burner over medium heat. Boil the sauce until it becomes thick enough to coat the back of a spoon.

Once the chicken and sauce are done, place the chicken back into the pot and toss to coat with the sauce. Serve over rice.
