Chicken Gnocchi Soup

Ingredients

  • 1 T olive oil
  • 1 onion
  • 3 garlic
  • 4 c chicken broth
  • 2c water
  • 2 chicken breasts
  • 2 carrot
  • 2-3 rib celery
  • 1 t Italian seasoning
  • 1 bay leaf
  • 16 oz gnocchi
  • 2 c heavy whipping cream or half and half
  • 1 bag spinach
  • 3 T cornstarch + 3 T water for slurry

To serve

Goes AMAZING with Hawaiian butter rolls to dip in.

Instructions

  1. Step 1

    Chop onion, carrot, celery. Preheat Instant Pot on Sauté function.

  2. Step 2

    Sauté onion, carrot, celery until soft and fragrant.

  3. Step 3

    Add garlic, broth, water, chicken, Italian seasoning, bay leaf, and salt to taste. Cover, Seal, and use the Soup setting for 10 minutes.

  4. Step 4

    Immediately manual-release pressure. Remove the chicken and begin to shred.

  5. Step 5

    Set the soup back to sauté. Add gnocchi, cream, shredded chicken, and spinach. Once simmering, cook for 5 minutes.

  6. Step 6

    Create the cornstarch slurry with 3T cornstarch and water. While soup is hot, slowly add slurry until soup reaches consistency desired, keeping in mind that as it continues to cook it will thicken. Cook 5 minutes.
