Ingredients

  • 2 lb boneless skinless chicken breasts
  • 1 T butter
  • 1 small yellow onion
  • 3 garlic
  • 1 T fresh ginger
  • 1 T garam masala
  • 1 t chili powder
  • 1 t cumin
  • 1 t turmeric
  • ¼ t cayenne
  • 1 8oz can tomato sauce
  • ½ t salt
  • 1 14oz can light coconut milk
  • ½ c plain nonfat Greek yogurt

Instructions

  1. Step 1

    Preheat Instant Pot's Saute feature. Cut chicken into bite-sized pieces, season with salt and pepper. Peel and mince ginger. Dice onion.

  2. Step

    Add butter to Instant Pot to melt. Add onion, garlic, and seasonings. Stir often, cook until onion soft.

  3. Step

    Add chicken and stir well to coat in spices. Cook until starting to brown, ~5min. Add tomato sauce, add salt. Stir to combine and deglaze.

  4. Step

    Cover, cook on High pressure for 8 minutes, with immediate Manual release.

  5. Step

    Uncover, stir in coconut milk. Turn Instant Pot on to Saute. Bring mixture to a simmer, stirring occasionally, until sauce thickens. ~10-15 min.

  6. Step

    Turn Instant Pot off. Let cool ~4 minutes. Stir in Greek Yogurt (trying to avoid curdling by letting it cool off).
