Chipotle Knockoff Burrito

Ingredients

  • 1 serving of Copycat Chipotle Chicken
  • 15oz serving of Black beans
  • 12" flour tortilla (low cal/carb if possible)
  • monterey jack cheese, or queso oaxaca
  • salsa or hot sauce of choice
  • brown rice (single serve cups work well, need half of one)

Avocado Sauce

  • ½ ripe avocado
  • 1 c plain nonfat yogurt
  • 1 garlic clove
  • Juice from ½ lime
  • pinch of cayenne
  • salt to taste

Notes

Makes somewhere between 2-4 burritos.

Instructions

  1. Step 1

    Cook chipotle chicken and black beans. Chop chicken into bite-sized pieces.

  2. Step 2

    Mix up avocado sauce. Either blend, or just mash thoroughly by hand til creamy.

  3. Step

    Arrange burritos. Warm tortilla in microwave. Then do avocado sauce, beans, rice, chicken, salsa, cheese.
