Cilantro Lime Chicken And Lentil Rice Bowls
Ingredients
- 2 c dry lentils
- 1 lb boneless skinless chicken breasts
- 3 c salsa verde
- 3 c chicken broth
- ½ small white onion, chopped
- 3 green onions, chopped
- ½ c cilantro, chopped
- 3 cloves garlic minced
- 2 jalapeƱos, deseeded and diced
- ½ t salt
- limes, queso cotija (when serving)
Instructions

Step 1
If cooking immediately, add all ingredients to Instant Pot. Cook for 30 min on Soup setting, and do Quick Release of pressure and steam.

Step 2
If freezing, add all ingredients to bag to marinate. Cook from frozen in Instant Pot, high pressure 25 minutes plus 10 minutes natural release.

Serve with rice and chips.
