Creamy Chicken Gnocchi Soup

Ingredients

  • 1 8oz jar oil-packed sun-dried tomatoes
  • 1 yellow onion
  • 2 large carrots
  • 6 garlic
  • 3-4 boneless skinless chicken thighs
  • 1 t Italian seasoning
  • 1 t paprika
  • salt and pepper to taste
  • 3 T flour
  • 2 T tomato paste
  • 4 c chicken broth
  • 1 T thyme
  • 2 c half-and-half
  • 1 package spinach
  • 1 lb potato gnocchi
  • parmesan cheese shaved to serve

Instructions

  1. Step 1

    Chop the sun-dried tomatoes and veggies. Chop the chicken into 1" pieces.

  2. Step 2

    In dutch oven on medium high-heat, add oil from the sun-dried tomato jar. Add veggies and the sun-dried tomatoes. Season with salt and pepper, cook until soft.

  3. Step 3

    Add chicken, season with spices and s&p. Cook until golden all over.

  4. Step 4

    Stir in flour and tomato paste until the tomato paste begins to caramelize.

  5. Step 5

    Pour in broth, bring to a light boil. Reduce heat to low, simmer, add thyme, simmer uncoverd 15 minutes.

  6. Step 6

    Stir in spinach, half-and-half, and gnocchi. Cook ~10 minutes.
