Crispy Chicken Patties

Ingredients

  • ⅓ c all-purpose flour
  • 1 large egg
  • 1 lb ground chicken
  • 3 scallions
  • ¼ c fresh parsley
  • 3 T mayonnaise
  • 3 T breadcrumbs
  • ½ t salt
  • ¼ t pepper
  • 1 t garlic powder

To serve

Goes well with arugula salad.

Instructions

  1. Step 1

    In shallow tray, add flour for dredging.

  2. Step 2

    In large mixing bowl, crack egg to whisk. Add the rest of the patty ingredients, and mix together by hand.

  3. Step 3

    Separate into 8 balls. Roll in flour. Press into flattened patty shape and set aside. Will hold together better if refrigerated for 30 min before frying.

  4. Step 4

    Heat 3 T neutral oil to a skillet over medium high heat. Once oil is hot and shimmering, cook patties. Cook them undisturbed ~3-4 min before flipping. Cook another ~2-4 min. When done, place on wire rack lined with paper towels to drain oil.
