Crispy Spicy Chicken

Crispy spicy chicken sandwich.

Ingredients

Main dish

  • 2 large (thick) chicken breasts
  • Buns
  • Mayonnaise
  • Tomato (optional)
  • Swiss (optional)

Wet Dip

  • ⅔ c plain yogurt
  • 1 t hot sauce (Frank's)
  • ⅛ t salt

Dry Dip

  • ½ c breadcrumbs
  • ½ t smoked paprika
  • ½ t cayenne
  • ⅔ t garlic powder
  • ⅛ t salt and pepper
  • 1½ T olive oil to clump

Instructions

  1. Step 1

    Preheat oven 425F. Foil a baking sheet, place wire rack on top. For air fryer, do 400F.

  2. Step 2

    Mix together wet ingredients in one container. Mix together dry ingredients (everything except oil) in second, separate container. Once dry is evenly mixed, add oil, until texture of dry mix is like clumpy sand.

  3. Step 3

    Pound chicken to even thickness, around ¾". Cut in half (width wise, not filet).

  4. Step 4

    Dip chicken in wet mix, then dry mix.

  5. Step 5

    Bake for 25 min in oven, or 20 min in air fryer total. Flip halfway through cooking.
