Ingredients

  • 2 t sesame oil, divided
  • 1 package extra firm tofu
  • 2 T cornstarch
  • 2½ T dark soy sauce or tamari
  • 1 T tahini
  • 1 knob fresh ginger, peeled and finely chopped
  • ½ t Chinese 5 spice powder
  • 1 t chili oil
  • 1 bok choy
  • lo mein noodles
  • 2 spring onion

Notes

Compare Foods sells spring onions, Publix sells lo mein noodles and bok choy. Can feasibly make 2 nights, can add wontons if need to fill out.

Instructions

  1. Step 1

    Crumble the tofu by hand until it is completely crumbly. Add the cornstarch. Separately, prep the bok choy by rinsing, and separating the leaves. Slice the spring onion.

  2. Step 2

    In a nonstick pan, add 1.5 t of sesame oil over medium-high heat. When hot, add the tofu, and ½ T of the dark soy sauce. Cook ~10 min or until crispy, stirring occassionally.

  3. Step 3

    In a separate pot, bring water to a boil and cook the lo mein noodles briefly until al dente.

  4. Step 4

    In a small bowl, add remaining 2 T soy sauce, tahini, ginger, 5 spice, chili oil, and 2 T water and stir well.

  5. Step 5

    When the tofu is done cooking, transfer to a clean bowl. Wipe the pan clean, return to heat, add another 1/2 t of sesame oil. Add the bok choy and fry for ~2-3min.

  6. Step 6

    Reduce heat. Add back the cooked noodles, the crispy tofu, the sauce, and spring onion. Heat through.
