Ingredients

Main body and Toppings

  • however many ears of corn
  • 1 t chili powder or Tajin
  • ½ c crumbled cotija
  • fresh cilantro

Cream sauce

  • ⅔ c mayonnaise
  • ⅔ c sour cream
  • ½ t garlic powder
  • Juice of 1 lime

Instructions

  1. Step 1

    Preheat oven 400F.

  2. Step 2

    Combine cream sauce ingredients together.

  3. Step 3

    Place corn husks directly on the oven rack and roast until corn is soft, about 35-40 minutes. Roast with husk on.

  4. Step 5

    Peel down husks, spread with cream mix. Serve immediately, garnish with chili powder/Tajin, cotija, and cilantro.
