Filipino Barbecue

Ingredients

  • 1 c Coke (not Coke Zero)
  • 1 c brown sugar
  • 1 onion
  • ½ c soy sauce
  • ½ c apple cider vinegar
  • ¼ c orange juice (2 oranges)
  • ¼ c ketchup
  • ⅛ c lemon juice (1 lemon)
  • 6 garlic cloves
  • 3 T oyster sauce or substitute
  • 1 T salt
  • 1 T pepper
  • 1 t red pepper flakes
  • 4 lb pork or chicken thighs

Instructions

  1. Step 1

    Dice onion, juice citrus. Cut meat into 1" cubes.

  2. Step 2

    Place all marinade ingredients in saucepan over low. Whisk at simmering for 5 minutes. Let return to room temperature.

  3. Step 3

    Marinate meat overnight. Cook as skewers on grill.
