French Onion Soup
Ingredients
Soup
- 1 T olive oil
- 2 T butter
- 5 large yellow onions
- 1 t salt plus more to taste
- 2 T flour
- 3 cloves garlic
- ½ c white wine or broth to deglaze
- 8 cups beef broth
- 1 t fresh thyme
- 1 T worchestershire sauce
Baguettes
- Baguette cut into diagonal thick slices
- Butter
- garlic powder
- gruyere cheese, thickly shredded
Instructions

Step 1
Slice the onions thinly. Finely mince the garlic.

Melt the olive oil and butter in large dutch oven over medium heat. Add in onions and salt and stir to coat the onions with the butter. Cook onions, stirring - check every 10-15 minutes until completely caramelized.

After onions completely caramelize, add in flour and garlic ~ 2 minutes.

Deglaze with 1/2 c liquid. Slowly add in beef broth, thyme, freshly ground black pepper, w.sauce, and bay leaves. Simmer uncover for 30 minutes. Remove bay leaf. Taste and adjust seasonings, add salt and pepper if necessary.

About 10 minutes before soup is done: Preheat the oven to 400F, line baking sheet with parchment. Add baguette slices, brush with melted butter and sprinkle of garlic powder. Toast for 5 minutes per side. Add shredded cheese on top of one side of toast and bake 3-5 minutes longer.

Ladle soup into bowls, add slice of baguette on top. Add more shredded cheese on top.
