Golden Soup
Ingredients
- 2 T olive oil
- ½ onion, chopped
- 2 cloves garlic
- 1 head cauliflower, chopped into ~5c
- 1 c cashews
- 2-3 t turmeric
- 2 t salt
- 3 c water
To serve
Top with crispy chickpeas
Instructions

Step 1
If freezing, chop ingredients and add all (except water) to bag to freeze. To cook from frozen, put all ingredients plus water into Instant Pot, 10 min + 7 min natural release.

If cooking immediately, heat oil in deep pot. Saute ingredients ~10 min. Begin adding water, ~3-4 cups and salt. Simmer until softened.

Blend soup until very smooth with immersion blender. Can continue adding water to thin out if necessary. Can season with salt and a squeeze of lemon juice, top with chickpease and drizzle of olive oil.
