Greek Chicken Meatballs

Ingredients

  • ½ c breadcrumbs
  • ½ c milk
  • 1½ lb ground chicken
  • 1 shallot, minced
  • 4 garlic, minced
  • ¼ c grated parmesan cheese
  • 1 T lemon juice
  • 1 t lemon zest
  • 1 t dry basil
  • 1 t dry parsley
  • 2 t dry oregano
  • ½ t dry thyme
  • ½ t dry dill
  • ¼ t red pepper flakes
  • 1 t salt

To serve

Serve with whipped feta.

Instructions

  1. Step 1

    Preheat oven to 450. Place oven rack in top position. Line baking sheet with aluminum foil and oil slightly.

  2. Step 2

    Place breadcrumbs in large bowl, pour in milk. Stir and let stand 5 mins to allow to absorb.

  3. Step 3

    Add all remaining ingredients, mix well. Scoop into ~15 2oz balls.

  4. Step 4

    Spray meatballs with olive oil mist lightly. Bake 15-18min, golden brown.

  5. TO FREEZE

    Once cooked, allow to cool completely. Flash freeze on parchment-lined baking sheet for 2 hours, then transfer to freezer-safe storage bag. Bake from frozen at 400 for 15 min, or air fry at 375 for 8 minutes.
