Harissa Chicken Bowl

Ingredients
Harissa Chicken Thighs
- 1½ lb chicken thighs
- 4 T olive oil (divided)
- 2 T Harissa paste
- 1 T honey
- juice of ½ lemon
- 2 garlic
- 1 t salt
- ¼ t pepper
Hot Harissa Vinaigrette
- ¼ c olive oil
- 2 T harissa paste, to desired spice level
- juice of ½ lemon
- ½ t onion powder
- ½ t garlic powder
- 1 t salt
Bowl
- Rice
- mixed salad greens
- pickled red onion
- hummus
- cucumbers & tomatoes
- Crazy Feta
- regular feta
- Pita / pita chips

Step 1
Marinate chicken at least 30 minutes before cooking. Make the vinaigrette. Prep bowl ingredients (rice, the crazy feta).
