Ingredients

Harissa Chicken Thighs

  • 1½ lb chicken thighs
  • 4 T olive oil (divided)
  • 2 T Harissa paste
  • 1 T honey
  • juice of ½ lemon
  • 2 garlic
  • 1 t salt
  • ¼ t pepper

Hot Harissa Vinaigrette

  • ¼ c olive oil
  • 2 T harissa paste, to desired spice level
  • juice of ½ lemon
  • ½ t onion powder
  • ½ t garlic powder
  • 1 t salt

Bowl

  • Rice
  • mixed salad greens
  • pickled red onion
  • hummus
  • cucumbers & tomatoes
  • Crazy Feta
  • regular feta
  • Pita / pita chips

Instructions

  1. Step 1

    Marinate chicken at least 30 minutes before cooking. Make the vinaigrette. Prep bowl ingredients (rice, the crazy feta).
