Homemade Gnocchi

Ingredients

  • 2 russet potatoes
  • 1½ c flour
  • ½ c ricotta
  • ¼ c grated Parmesan
  • 1 egg
  • ¾ t salt
  • ¼ t pepper

Instructions

  1. Step 1

    Preheat oven to 400F. Line baking sheet with foil.

  2. Step 2

    Wash potatoes, and pierce with a fork. Place on baking sheet and bake until tender, ~1 hr. Let cool completely.

  3. Step

    Once cool, cut potatoes and scoop out flesh into a bowl and mash.

  4. Step

    Transfer 1½ c of potato to a mixing bowl, along with the rest of the ingredients and mix together.

  5. Step

    On a floured surface, divide dough into 6 pieces. Roll each piece into ~18" long rope, 1" diameter. Cut in ¾" pieces.

  6. Step

    To freeze, place uncooked gnocchi on a floured parchment lined baking sheet, and let air dry at room temp for 1 hr. Transfer baking sheet to freezer until solid, another 1hr. Transfer to freezer bags.

  7. Step

    To cook, bringe salted water to boil. Cook until tender, ~4-6 min fresh or until they float in the water. Can also pan fry gnocchi until golden brown over medium heat, ~15 minutes.
