Instant Pot Mexican Rice
Ingredients
- Oil
- ½ yellow onion diced
- 2 cloves garlic minced
- 1 jalapeño, seeded and minced
- 1½ t smoked paprika
- ½ t cumin seeds (or 1/4t powder)
- ½ t cumin powder
- ¼ t Mexican oregano (or marjoram)
- 1 t chili powder
- 2 c white rice uncooked, basmati ok
- 2 c veg broth
- 1 t salt
- 1 bay leaf
- ⅔ c tomato sauce or diced tomatoes
Instructions

Step 1
In IP, set to Saute medium. Add oil, cook onions, garlic, and jalapeño.

Once tender, add spices and stir. Toast for about 15seconds, before adding rice, broth, and rest of the ingredients. Stir well.

Put lid on IP and pressure cook for 4 minutes. natural release for 7 minutes, then quick pressure release.

Fluff with fork and serve.
