Ingredients

  • Oil
  • ½ yellow onion diced
  • 2 cloves garlic minced
  • 1 jalapeño, seeded and minced
  • 1½ t smoked paprika
  • ½ t cumin seeds (or 1/4t powder)
  • ½ t cumin powder
  • ¼ t Mexican oregano (or marjoram)
  • 1 t chili powder
  • 2 c white rice uncooked, basmati ok
  • 2 c veg broth
  • 1 t salt
  • 1 bay leaf
  • ⅔ c tomato sauce or diced tomatoes

Instructions

  1. Step 1

    In IP, set to Saute medium. Add oil, cook onions, garlic, and jalapeño.

  2. Step 2

    Once tender, add spices and stir. Toast for about 15seconds, before adding rice, broth, and rest of the ingredients. Stir well.

  3. Step 3

    Put lid on IP and pressure cook for 4 minutes. natural release for 7 minutes, then quick pressure release.

  4. Step 4

    Fluff with fork and serve.
