Italian Beef Sandwiches

Ingredients

Beef

  • 3 lb beef chuck roast, cut in chunks
  • 3 cloves garlic
  • ½ onion, diced
  • 2 t dry oregano
  • 1 t dry basil
  • 1 t onion powder
  • 1 t paprika
  • ½ t garlic powder
  • ½ t red pepper flakes
  • 1 t salt
  • ½ t black pepper
  • at least 3 c beef broth*
  • ¼ c brine from giardiniera*

Sandwiches

  • Hoagie or sandwich rolls, ~6 6inch
  • sliced provolone
  • giardiniera

To serve

Serve with a side of a regular salad or an italian pasta salad

Instructions

  1. Step 1

    If cooking immediately, combine all beef ingredients in Instant Pot. Cook on high pressure for 60 min, natural pressure release 15 min.

  2. Step 2

    If freezing, freeze all beef ingredients minus the liquids. From frozen, add to Instant Pot along with 2½c broth and ¼c brine. Cook 1 hour 15 min, natural pressure release 15min.

  3. Step 3

    Shred beef. Strain and keep broth as an au jus to dip.

  4. Step 4

    Open sandwich roll, butter one side, lay provolone on other. Quickly toast/broil.
