Kielbasa, cabbage, and potato dinner

Ingredients

Meal Body

  • ⅔ lb kielbasa
  • ½ lb baby red potato
  • ⅔ head cabbage
  • 1 T olive oil
  • salt, pepper

Mustard Vinaigrette

  • ⅛ c olive oil
  • 1 T red wine vinegar
  • ½ T dijon mustard
  • ½ clove garlic
  • ⅛ t salt, pepper

Instructions

  1. Step 1

    Preheat oven 400F. Cover baking sheet with aluminum foil.

  2. Step 2

    Slice kielbasa in ⅔" rounds. Wash potatoes, slice into ⅔" rounds. Toss both in 1T olive oil. Arrange on sheet pan, salt and pepper.

  3. Step 3

    Wash cabbage. Cut into quarters, remove stem. Cut in half heightwise, then into 1" wide slices widthwise.

  4. Step 4

    Nestle cabbage onto baking sheet. Brush with olive oil, salt and pepper.

  5. Step 5

    Roast for 20 minutes. Flip. Roast 10-15 minutes.

  6. Step 6

    Whisk together vinaigrette.
