Lamb Pita Pizza
Ingredients
- Pita
- 50g plain greek yogurt (each pizza)
- zaatar
- harissa
- fresh mozzarella
- feta cheese
- red onion, fresh slices or pickled
- roma tomato
- lettuce
- dill
- olive oil
Lamb Meatball
- 1 lb lamb (or 50/50 with beef to stretch further)
- 7g salt
- 1 small shallot, grated
- 2 cloves garlic
- parsley
- "large spoonful" of kofte spice mix (in notes)
Kofte pice mix
2:1:1:1:¼ of cumin, chile powder, paprika, oregano, ground cinnamon
Instructions

Step 1
Make meatballs. Can form into more ovular shaped balls for easier slicing later. Cook in cast iron pan.

Prep all pizza ingredients. Cut tomato, shred lettuce, prep dill, slice onion if using.

Preheat broiler.

On pita, layer ingredients. Yogurt, zaatar, harissa, cheeses, onion.

Broil until crispy and cheese melted/slightly burned.

Add fresh ingredients on top if desired: tomatoes and lettuce. Top with dill and a drizzle of good olive oil.
