Lamb Pita Pizza

Ingredients

  • Pita
  • 50g plain greek yogurt (each pizza)
  • zaatar
  • harissa
  • fresh mozzarella
  • feta cheese
  • red onion, fresh slices or pickled
  • roma tomato
  • lettuce
  • dill
  • olive oil

Lamb Meatball

  • 1 lb lamb (or 50/50 with beef to stretch further)
  • 7g salt
  • 1 small shallot, grated
  • 2 cloves garlic
  • parsley
  • "large spoonful" of kofte spice mix (in notes)

Kofte pice mix

2:1:1:1:¼ of cumin, chile powder, paprika, oregano, ground cinnamon

Instructions

  1. Step 1

    Make meatballs. Can form into more ovular shaped balls for easier slicing later. Cook in cast iron pan.

  2. Step 2

    Prep all pizza ingredients. Cut tomato, shred lettuce, prep dill, slice onion if using.

  3. Step 3

    Preheat broiler.

  4. Step 4

    On pita, layer ingredients. Yogurt, zaatar, harissa, cheeses, onion.

  5. Step 5

    Broil until crispy and cheese melted/slightly burned.

  6. Step 6

    Add fresh ingredients on top if desired: tomatoes and lettuce. Top with dill and a drizzle of good olive oil.
