Lentil Soup

Ingredients

  • 4 c broth + 4 c water (or 8c broth)
  • 1 28oz can whole tomatoes
  • 1½ c lentils (brown, green, or mixed)
  • 3 carrots
  • 2 celery
  • 1 onion
  • 3 cloves garlic
  • 1 T olive oil
  • 1 t curry powder
  • ½ t cumin
  • 1 bay leaf

Instructions

  1. Step 1

    Dice onion, celery, carrots, garlic.

  2. Step 2

    In large pot, heat olive oil over medium heat. Add diced onion, carrot, celery. Cook until onion soft.

  3. Step 3

    Add garlic, cumin, curry powder until fragrant, ~1 min.

  4. Step 4

    Pour in tomatoes. Break up the tomatoes with spoon or other tool. Add broth and water. Bring to a boil over medium-high heat.

  5. Step 5

    Add lentils, reduce to simmer. Add bay leaf. Simmer uncovered for 1 hour, stirring occasionally. Add more broth/water if needed. Skim off foam. Salt to taste. Can partially immersion blend if desired.
