Ingredients

  • 1 T olive oil
  • 3 large carrots, finely chopped
  • 2 stalks celery, sliced
  • 1 small onion, diced
  • 3 cloves garlic
  • 1 t dried parsley
  • 1 t dried oregano
  • 1 t dried basil
  • ½ t salt
  • ⅛ t black pepper
  • 28 oz can diced tomatoes
  • 4 c chicken broth
  • 15 oz can red kidney beans, rinsed
  • 1½ c dry rotini
  • 2 c fresh spinach, chopped

Instructions

  1. Step 1

    Prep vegetables. Chop carrots, slice celery, dice onion.

  2. Step 2

    In large Dutch oven, cook mirepoix in oil over medium-high heat until onion is soft. Add garlic, herbs, and spices for ~1 min.

  3. Step 3

    Add canned tomatoes, chicken broth, salt and pepper, and beans (rinsed). Bring to a boil, cover, simmer for 12 minutes.

  4. Step 4

    Add in uncooked pasta, let simmer covered for ~10 min or until pasta is al dente. Stir in spinach after giving rough chop.
