Pasta Bolognese With Wine

Pasta bolognese

Ingredients

  • 4 slices of bacon
  • 1 onion
  • 1 rib of celery
  • 4 garlic
  • salt and pepper
  • ¼ t red chili flakes
  • 1½ lb ground chuck (80-85%)
  • ¼ c tomato paste
  • 1 28oz can crushed tomatoes
  • 2 c chicken stock
  • 1 c red wine
  • 4 sprigs thyme
  • 1 lb uncooked pasta (penne, rigatoni, tagliatelle, rotini)
  • ¼ c milk
  • ½ c parmesan

Instructions

  1. Step 1

    Chop bacon, onion, celery.

  2. Step 2

    In a Dutch Oven on medium heat, cook the baccon.

  3. Step 3

    Add the onion, celery, garlic,, salt and pepper, and red chili flakes to the pot, cook until the onion is soft and transluscent.

  4. Step 4

    Add ground chuck, cook until brown.

  5. Step 5

    Stir in the tomato paste, crushed tomato, chicken stock, wine, and thyme. Bring to a boil, then reduce to a simmer. Cover, and cook for 5 minutes.

  6. Step 6

    Remove the thyme, stir in the uncooked pasta. Simmer uncovered for 15 minutes, or until the pasta is cooked. Stir occasionally.

  7. Step 7

    Stir in the milk and parmesan. Adjust seasonings to taste.
