Pesto Salad With Chicken
Ingredients
Pesto Vinaigrette
- 4 T pesto
- 2 T lemon juice
- ¼ c olive oil
- salt and pepper to taste
Chicken
- 1 lb chicken breasts
- salt and pepper
- 1 T olive oil
- 1 T fresh chopped rosemary
- 1 T fresh chopped thyme
- 1 T dry oregano
Salad
- 1 large head lettuce (red, green)
- 4 slices bacon
- pint blueberries
- pint strawberries
- feta cheese
- basil
- chives
- heirloom tomatoes
- avocados
Instructions

Step 1
Wash and dry vegetables and fruit. Chop strawberries, tear basil, chop/ready thyme and rosemeary. Cut lettuce, squeeze lemon juice.

Cook bacon. Season chicken in oil, seasonings, and herbs. Cook chicken. Let rest before slicing into pieces.

Whisk together vinaigrette. Serve salad with all ingrdients.
