Ingredients

  • 4-5lb bone-in chicken Thighs
  • ⅓ c olive oil
  • ¾ c sour orange juice (or 1/2c OJ + 1/4c lime juice)
  • 1 small yellow onion, diced
  • 6 cloves of garlic
  • 2 oz achiote paste (Achiote Annatto, usually El Yucateco brand)
  • 1 T ground coriander
  • 1 T cumin
  • 1 T salt
  • 2 t paprika
  • 2 t dried oregano
  • 1 t pepper
  • 1 t chipotle chili pepper

Instructions

  1. Step 1

    Debone chicken, leave skin-on. Chop onion and garlic.

  2. Step 2

    Combine all marinade ingredients together. Marinate between 4-24 hours. Let chicken sit at room temp ~20m before grilling.
