Pollo Guisado
Ingredients
- 1½ lb boneless skinless chicken thighs
- 2 t adobo seasoning
- 2 T vegetable oil
- 1 yellow onion
- 3 garlic cloves
- ½ c sofrito
- 1 8oz can tomato sauce
- 1 packet sazon seasoning with annatto
- 2 bay leaves
- 2 t dried oregano
- ¼ c manzanilla olives, pimiento-stuffed
- 1 large russet potato
- 2 large carrots
- 3 c chicken stock
Instructions

Step 1
Dice onion, set in own bowl. Wash and peel potato, large 2" dice. Wash carrots, cut into ¼" rounds. Place potatoes and carrots in same bowl.

Dry chicken with paper towel. Cut into 2" cubes, season with Adobo seasoning.

In Dutch Oven on medium-high heat, add oil and cook chicken until browned. Remove from pot.

Add onion to pot, cook until translucent. Add garlic, cook briefly until fragrant. Add tomato sauce and sofrito, ~3 minutes until bubbly.

Step 5
Add the rest of the seasoning, herbs, potatoes, carrots, olives, and chicken broth. Bring to a boil.

Add chicken back to pot. Lower to simmer, cover, cook 40-50 minutes. Salt to taste.
