Puff Pastry Tomato Tart

Ingredients

Meatballs

  • 1 9x13" sheet frozen puff pastry, thawed
  • 6 oz cheddar (spicy optional, or red pepper flakes)
  • salt
  • 1 large tomato, cut into 6 slices
  • 1 T fresh thyme
  • 1 egg
  • pepper

Instructions

  1. Step 1

    Line a baking sheet with parchment paper. Lay sheet of puff pastry out, cut into 6 equal rectangles. Lay on the baking sheet, leave ½" space between each piece. Poke with fork a few times all over.

  2. Step 2

    Sprinkle each puff pastry piece with 1 oz cheese, leave ¾" border around the edge, place sheet in fridge while prepping tomatoes.

  3. Step 3

    Slice tomatoes, salt both sides, lay between 2 large paper towels on large plate, let sit 15 minutes to sweat. Preheat oven to 400F.

  4. Step 4

    Top the puff pastry with tomato slices, sprinkle of thyme. Whisk egg to brush edges of pieces. Bake 25-30 min, season with pepper.
