Ingredients

  • 1 pkg Andouille sausage
  • 1 yellow onion
  • 1 bell pepper
  • 3 ribs celery
  • 4 garlic
  • 2 t paprika
  • 1 t dried oregano
  • 1 t dried thyme
  • ½ t garlic powder
  • ½ t onion powder
  • ¼ t cayenne pepper
  • ¼ t pepper
  • 3 15oz cans kidney beans
  • 1 c chicken broth
  • rice

Instructions

  1. Step 1

    Slice sausage into rounds. Dice onion, bell pepper, and celery. Drain and rinse 2 cans of beans. With the third can, put in blender along with its liquid and puree. Can also begin cooking the rice.

  2. Step 2

    In large pot over medium heat, add ~1T oil and cook sausages until they are well browned.

  3. Step 3

    Add onion, bell pepper, celery, and garlic to the pot. Cook until onions translucent.

  4. Step 4

    Add spices, herbs, and seasonings to pot. Stir and cook for ~1 min.

  5. Step 5

    Add the chicken broth. Use the liquid to deglaze the bottom of the pot. Add the drained beans and the puree and stir.

  6. Step 6

    Place a lid on the pot, allow to come up to a boil. Once boiling, turn down to low and simmer for 30 minutes, stirring occasionally.

  7. Step 7

    Adjust seasonings to taste. Serve beans and a scoop of rice on top.
