Sausage Squash Kabobs

Ingredients

Kabobs

  • 1 lb small red potatoes
  • 1 lb kielbasa
  • 2 small yellow squash
  • 2 small zucchini

Glaze

  • 1 T water
  • ½ c honey
  • ¼ c Dijon
  • ½ t orange zest

Instructions

  1. Step 1

    Halve the red potatoes if needed. Slice kielbasa, squash, and zucchini 1/2" thick.

  2. Step 2

    Bring a pot of water to boil and salt. Add potatoes, boil ~6 min or until just tender. Drain.

  3. Step 3

    Make glaze by mixing all ingredients.

  4. Step 4

    Alternately thread skewers with sausage, potatoes, and squashes. Brush with half the glaze. Grill skewers, using remaining half of glaze to baste.
