Spaghetti with Vegetable & Meat Sauce

Ingredients

  • 1 T olive oil
  • ½ lb lean ground beef
  • 1 yellow onion
  • 2 cloves garlic
  • 1 zucchini
  • 2 carrots
  • ½ t basil
  • ½ t oregano
  • salt & pepper, red pepper flakes to taste
  • 24oz 3-cheese pasta sauce
  • 12oz spaghetti

Instructions

  1. Step 1

    Shred/grate zucchini and carrots. Dice onion.

  2. Step 2

    Cook onions and garlic in oil over med heat. Add and cook ground beef.

  3. Step 3

    Add carrots and zucchini to skillet, along with herbs and seasoning. Cook around ~7-10min.

  4. Step

    Add pasta sauce to skillet.

  5. Step 4

    Separately, cook spaghetti. Drain. Return to spaghetti pot. Add 1 cup of sauce to spaghetti and mix. Serve spaghetti with more sauce spooned over top.
