Spaghetti Aglio E Olio

Ingredients

  • ¾ lb spaghetti
  • ½ c high quality EVOO
  • 8 garlic cloves thinly sliced
  • ½ t red pepper flakes
  • ⅓ c freshly grated parmesan
  • chopped parsley to garnish

Instructions

  1. Step 1

    Cook pasta til just al dente. Reserve 1.5c of the pasta water.

  2. Step 2

    Warm the olive oil in a large cast iron pan over medium heat. Add the garlic and cook ~2-3 min, until the garlic is only just turning golden brown (DO NOT BURN IT). Add the red pepper flakes, toss for 30 seconds. IF the pasta is not ready yet, move the oil off the heat.

  3. Step 3

    Carefully add the reserved pasta water to the pan. Bring to a simmer, reduce by a third.

  4. Step 4

    Add in cooked pasta, toss for a few minutes. Turn the heat off, add parmesan and continue to toss. Allow the pasta to rest before serving. Top with more parmesan and parsley.
