Torta de Huevo

- day-old long-grain white rice
- 2 eggs
- ketchup

Crack the eggs into the bowl with rice and mix very well. Season with salt if needed.

Add a touch of oil to a non-stick pan over medium heat. Cook ~6-7 minutes, or until the sides and bottom are browned and crispy. Flip, cook another ~6min. Serve with ketchup.
