Tortellini with Sausage and Marscapone

Ingredients

  • 1 pkg bulk spicy Italian sausage
  • 4 garlic
  • 1 shallot or small yellow onion
  • ½ t red pepper flakes
  • 2 c marinara
  • ¼ c heavy cream
  • ¼ c marscapone cheese
  • 1 9oz pkg refrigerated tortellini
  • salt and pepper, parmesan to taste

Instructions

  1. Step 1

    In 10-12" cast iron skillet over medium-high heat, cook sausage until browned.

  2. Step 2

    Cook tortellini according to directions. Save ~¼c pasta water.

  3. Step 3

    Add onion, and cook briefly. Add garlic and red pepper flakes until fragrant.

  4. Step 4

    Add the marinara, cream, and marscapone. Cook ~5-7 min until saucy.

  5. Step 5

    Add the tortellini to the sauce. Season with salt and pepper as needed, add pasta water as needed. Top with parmesan.
