Ingredients

Cake

  • 2 c flour
  • ¾ t baking powder
  • ¼ t salt
  • 5 eggs (separated yolks/whites)
  • 1¼ c granulated sugar (separated)
  • ½ c whole milk
  • 2 t vanilla extract

Syrup

  • 1 14oz can sweetened condensed milk
  • 1 12oz can evaporated milk
  • ⅔ c whole milk

Frosting

  • 2 c heavy whipping cream
  • 2 T powdered sugar
  • fresh strawberries to garnish

Note

Our glass baking dish with the red lid works great for this.

Instructions

  1. CAKE:

    Step 1

    In one large bowl, whisk together flour, baking powder, salt.

  2. Step 2

    Separate eggs, placing whites into a large bowl and yolks in a medium bowl.

  3. Step 3

    Beat egg whites on high speed until foamy and doubled in size, about 1 minute. While beating, slowly pour in ¼ c sugar. Continue beating until STIFF peaks form, ~3 minutes.

  4. Step 4

    Clean off whisk beaters. Add 1 cup sugar to egg yolks, beat on medium until pale and fluffy ~1minute. Beat in milk and vanilla.

  5. Step 5

    Preheat oven to 350F. Butter a 13x9 baking dish.

  6. Step 6

    Pour egg yolk mix into flour mix, beat until just combined.

  7. Step 7

    Using a spatula, GENTLY FOLD egg whites into the flour mixture in two batches. Aiming for just until no white streaks remain. Pour gently into cake pan.

  8. Step 8

    Bake 25-30 minutes. Let cake cool COMPLETELY. It will slightly shrink/deflate, that is normal.


  9. SYRUP:

    Step 1

    In a medium bowl, whisk together the three milks until well combined. Once the cake has cooled, poke the cake ALL OVER with a fork. Pour syrup slowly over the cake. Cover and chill overnight.


  10. FROSTING:

    Step 1

    In large bowl, beat cream and sugar on medium speed until SOFT peaks form. Spread over cake, serve with strawberries.
