Turkey meatballs with angel hair

Ingredients

Meatballs

  • ½ lb ground Turkey
  • 1 cloves garlic
  • 1 shallot
  • ⅛ c chives
  • ⅛ c grated parmesan
  • ⅛ c sun dried tomatoes in olive oil
  • 1 t red pepper flakes
  • ½ t salt
  • ¼ t pepper

Pasta

  • ½ lb angel hair
  • 1 pint cherry tomatoes
  • 2 cloves garlic
  • fresh basil (optional)

Instructions

  1. Step 1

    Finely dice shallot. Chop chives and sun dried tomatoes. Form meatballs, trying to not overmix. Aim for fairly small meatballs.

  2. Step 2

    Heat olive oil in large skillet over med-high. Add about half the meatballs, cooking for 3-4 min, turning to brown. Then finish cooking ~~6min more. Remove, cook the other half.

  3. Step 3

    Cook angel hair according to directions. Cut the cherry tomatoes in halves.

  4. Step 4

    Once all meatballs cooked and removed, add ~2T olive oil to the skillet on medium high. Add the cherry tomatoes and sautee buntil burst/falling apart. Add garlic. Season with salt and pepper.
