Vegetable Beef Soup

Ingredients

  • 1½ lb beef chuck roast (or stew meat)
  • 1 T olive oil
  • 1 onion
  • 2 garlic
  • 6c beef broth
  • 1 15oz can diced tomatoes
  • 1 t Italian seasoning
  • 2 potatoes
  • 3 carrots
  • 1 celery
  • 6oz green beans
  • ½ c corn kernels

Instructions

  1. Step 1

    Trim and cut beef into 1/2" pieces. Chop onion, garlic. Cube potatoes into 1/2" pieces, slice carrots and celery. Cut green beans into 1" pieces if fresh.

  2. Step 2

    Season beef with salt and pepper. In large pot, heat olive oil over medium-high heat, and brown the beef in batches.

  3. Step 3

    Remove beef. Reduce heat to medium, cook onion until soft. Add garlic, ~1 min.

  4. Step 4

    Add a touch of broth to deglaze. Then add beef back plus the rest of the broth, tomatoes, and Italian seasoning. Boil, then simmer 45-65 min, or until beef is tender.

  5. Step 5

    Add potatoes, carrots, celery, simmer 15 minutes more. Add green beans, corn, simmer 10 minutes more. Salt to taste.
