Vegetable Soup

Ingredients

  • 1 T olive oil
  • 1 yellow onion
  • 2 ribs celery
  • 1 28oz can diced tomato
  • 1 15oz can tomato sauce
  • 1 15oz can chickpeas
  • 1 16oz bag frozen mixed vegetables
  • 2 russet potatoes
  • 2 t Italian seasoning
  • 4 c vegetable broth

Instructions

  1. Step 1

    Dice onion and celery. Rince chickpeas. Dice potatoes.

  2. Step 2

    In large crock pot over medium heat, cook onion and celery in olive oil until onion is soft.

  3. Step 3

    Add diced tomato, tomato sauce, chickpeas, mixed veggies, potatoes, seasoning, and THREE cups of broth, stir to combine. Turn heat up to bring to a boil, simmer for 25 minutes until potatoes are fork tender.

  4. Step 4

    Add up to the 1 remianing cup of additional broth to reach desired consistency. Salt and pepper to taste.
