Veggie Bowl with Pickled Onions

Ingredients

Base

  • either a head of cauliflower or of broccoli
  • 2 sweet potatoes
  • ½ c olive oil
  • 2 T garlic powder
  • 1 T onion powder
  • 2 T paprika
  • s & p
  • avocado
  • pickled onions
  • rice (made w/ garlic powder, turmeric, and chicken broth)
  • Eggs
  • Avocado

Lemon Tahini Dressing

  • ¼ c tahini
  • 2 T olive oil
  • 3 T water
  • 1 lemon, juiced
  • 1 t garlic powder

Instructions

  1. Step 1

    Chop cauli/brocc into florets, and dice sweet potato. Toss in olive oil, add spices. Line a pan with foil, broil for 20 min, flipping halfway through.

  2. Step 2

    Begin cooking hard/soft-boiled eggs.

  3. Step 3

    Begin cooking the rice. Cooking it with garlic powder, turmeric, and chicken broth/bouillion is a great option.

  4. Step 4

    Make the tahini dressing.

  5. Step 5

    Assemble.
    Rice < Veggies < Avocado < Pickled Onion < Egg < Dressing < Fresh cracked black pepper
