White Chicken Chili
Ingredients
- 1½ chicken breasts
- 1 15oz can black beans
- 1 15oz can white beans
- 1 onion
- 1 15 oz can corn
- 1 10oz can diced tomatoes with green chilis
- ½ c chicken broth or stock
- 1 t chili powder
- 1 t cumin
- 1 ranch dip packet mix*
- 8oz cream cheese
To serve
Serve with chips, avocado, cilantro, cotija, etc.
*Ranch Dressing mixes come in differing sizes (0.4 to 1.5 oz). It should be enough to make 16 oz of dressing or dip per package instructions.

Step 1
Drain and rinse beans. Chop onion.

Place ingredients in order: chicken, beans, onion, corn, tomato, broth, spices and ranch. Stir everything to combine, get juice under the chicken so it doesn't burn.

Divide cream cheese into 6 pieces, place on top of chili. Cover and put in Sealing position. Cook 20 minutes, high pressure. Natural release 10 min, then manually release pressure.

Shred chicken, either by removing or directly in pot. Stir everything together to melt the cream cheese.
