Chicken and Sour Cream Green Enchiladas
Ingredients
- 1 lb chicken breast
- 1/2 t garlic powder
- 1/2 t cayenne
- 1/2 t cumin
- 1/2 t salt and pepper
- 8 oz sour cream
- 2 c shredded mozzarella
- 8 oz can diced green chiles
- 15 oz can green enchilada sauce
- soft taco sized tortillas
To serve
Serve with mexican rice.
Instructions

Step 1
Season chicken with spices. Bake chicken 30min at 425F, slightly on the drier side. Let chicken rest.

Shred chicken. Mix with sour cream, 1 cup of cheese, green chiles, a dash of enchilada sauce.

Preheat oven to 350F.

Step 4
Spray casserole dish with spray. Spoon filling into tortillas, arrange seam side down.

Step 5
Bake dry enchiladas 20 min. Take out, pour enchilada sauce on top and spread remaining cheese. Bake another 10 minutes.
